Blackberry Mint Mojito Recipe

Laugh if you'd like but Zach and I never and I mean like never, ever make mixed drinks.  We usually have some form of wine or beer in our fridge for those summer evenings when you just need a cold drink, but we very rarely have any form of liquor in our cabinets.  The other night I was Pinteresting, naturally, and I told Zach - I'm going to make a run to the store tomorrow and buy some Rum or something for some fun mixed drinks.  I think I got a hmmm mmm response, but I was pretty excited about the idea.

It has been forever since we have had a mixed drink and I just wanted something light and summery for those long days after editing or working outside to just put up our feet and relax.  I started off with something simple and not overly sweet and mixed up this delicious Blackberry Mint Mojito - just a few ingredients - one which you can probably pick right outside your door if you're close to the woods like us.  It was absolutely delicious and refreshing so I just felt the need to share!


Blackberry Mint Mojito Recipe

Blackberry Mint Mojito

  • 2 Teaspoons sugar

  • 1 TSP. fresh lemon juice

  • 1 TSP. fresh lime juice

  • 1/2 Cup club soda

  • 2 oz Cup vodka or light rum

  • 6 Driscoll's Blackberries

  • 6 large mint leaves

  • Crushed Ice

Muddle blackberries on bottom of cup.  Add juice and sugar.  Mix well.  Add Rum and club soda.  Add crushed ice.  Mix well.  Top with 1 or 2 blackberries and 1 mint leaf.
